happy thanksgiving

this recipe is for dani (she requested it):
(it's not the exact one that i make, but it is close and it sounds even better than the one i make):

Pumpkin Pie topped with Homemade Bourbon Whipped Cream
Prep Time: 40 minutes plus crust chilling time,
Cook Time: 1 hour 15 minutes,
Makes: Two 9-inch pies

Crust
3 c. organic unbleached pastry flour
1 1/2 tsp. sea salt
1 c. non-hydrogenated vegetable shortening, chilled
1/4 c. Unsalted Butter, chilled
1/2 c. Organic Whole Milk, chilled

Mix flour and salt together in a large bowl. Cut in shortening and butter with a pastry cutter, until it resembles coarse meal.
Sprinkle milk over dough and work in with your hands until it sticks together.
Divide dough in half, wrap in plastic wrap and refrigerate for at least an hour.
Roll out dough on a lightly floured surface into 12-inch discs.
Place in 9-inch pie pans and crimp edges.
Prick dough with a fork, and refrigerate until ready to use (at least 30 minutes).

Filling

1 c. organic golden brown sugar
1 Tbsp. ground cinnamon
2 tsp. ground ginger
1 tsp. ground nutmeg
1/2 tsp. cloves
1/2 tsp. ground allspice
2 tsp. vanilla extract
1 Tbsp. Organic Maple Syrup
4 Eggs
2 (15.4 oz) cans organic pumpkin puree
2 (12 oz.) cans evaporated milk

Preheat oven to 425°F.
Mix sugar and spices together in a bowl. Whisk in syrup, eggs, pumpkin and milk.
Pour filling into pie shells, dividing evenly between the two shells.
Bake for 12 minutes.
Reduce heat to 350°F and bake until the filling is set, about 45 to 60 minutes.
Cool before serving.

Top with bourbon whipped cream.

Bourbon Whipped Cream
Makes: About 2 cups

1 c. organic heavy whipping cream
1 tsp. vanilla extract
3 Tbsp. confectioners’ sugar
3 Tbsp. bourbon

Chill beaters and glass bowl in freezer for a half hour.
Add ingredients to bowl and whip until stiff peaks form.

sounds yummy to me . . .

good news: i found my missing cranberries cd! (no need to argue) it was my favorite crandberries cd and i couldn't find it anywhere. i had been pretty sad about it for a few months until i went to open my jimmy eat world album and there it was! that little brown couch looking at me like "you left me in here with these indie kids! how could you!?"
sigh of relief . . . it is nice to have the cranberries back again . . . there is nothing like yodeling the day before thanksgiving to make all seem well with the world.

--------------------

while at the theatre the other day (when i went to see harry potter) i saw a poster for the second pirates of the caribbean set to open on July 7th. i was sad to find that keith richards had to back out of being in the movie . . . sad. but excited about seeing the flick! who-hoo!

and they are making a third pirates too . . . hooray!

my friend sent me this email forward about what kind of tree you are (sort of like astrology, but different--plantology?) and according to the chart i am a poplar (but barely, i would have been a cedar if i had been born the very next day) and this is what it said about poplars:

Poplar Tree (the Uncertainty) -- looks very decorative, talented, not very self-confident, extremely courageous if necessary, needs goodwill and pleasant surroundings, very choosy, often lonely, great animosity, great artistic nature, good organizer, tends to lean toward philosophy, reliable in any situation, takes partnership seriously.

a lot of that is true . . . except the organized part of it i think. but here is what it said about cedars:

Cedar Tree (the Confidence) -- of rare strength, knows how to adapt, likes unexpected presents, of good health, not in the least shy, tends to look down on others, self-confident, a great speaker, determined, often impatient, likes to impress others, has many talents, industrious, healthy optimism, waits for the one true love, able to make quick decisions.

mostly true too other than the great speaker and able to make quick decisions part . . . maybe i am just on the cusp or something . . .

if you want, you can tell me what tree you are based on this chart and i'll tell you what it means ok?
